3 oz tofu (85g), 1 cup mixed vegetables (100g), 1 tbsp sesame oil (15ml)

Ingredients:

  • 3 oz (85 g) firm tofu, cubed

  • 1 cup (100 g) mixed vegetables (e.g., carrots, snap peas, broccoli)

  • 1 tbsp sesame oil

  • 1 tbsp low-sodium soy sauce


Instructions:

  1. Heat sesame oil in a skillet over medium-high heat. Add tofu cubes and cook until golden on all sides, about 3-4 minutes per side. Remove from skillet.

  2. Add mixed vegetables to the skillet and stir-fry for 5-7 minutes.

  3. Return tofu to the skillet, add soy sauce, and toss to combine. Cook for an additional 1-2 minutes. Serve warm.


Flavoring Options:

  1. Spicy Peanut Sauce: Use powdered peanut butter, soy sauce, and chili paste (~20 calories/tbsp).
