3 oz (85 g) firm tofu, cubed
1 cup (100 g) mixed vegetables (e.g., carrots, snap peas, broccoli)
1 tbsp sesame oil
1 tbsp low-sodium soy sauce
Instructions:
Heat sesame oil in a skillet over medium-high heat. Add tofu cubes and cook until golden on all sides, about 3-4 minutes per side. Remove from skillet.
Add mixed vegetables to the skillet and stir-fry for 5-7 minutes.
Return tofu to the skillet, add soy sauce, and toss to combine. Cook for an additional 1-2 minutes. Serve warm.
Flavoring Options:
Spicy Peanut Sauce: Use powdered peanut butter, soy sauce, and chili paste (~20 calories/tbsp).
