1 medium bell pepper (120g), 3 oz ground beef (85g), 1/4 cup cooked quinoa (43g), 1 tbsp shredded cheese (7g)

Ingredients:

  • 1 medium bell pepper (120 g), halved and deseeded

  • 3 oz (85 g) cooked ground beef

  • 1/4 cup (43 g) cooked quinoa

  • 1 tbsp shredded cheese


Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Mix cooked ground beef and quinoa. Stuff the bell pepper halves with the mixture.

  3. Sprinkle shredded cheese on top and bake for 25-30 minutes until the peppers are tender.


Flavoring Options:

  1. Tomato-Chili Sauce: Blend roasted tomatoes, chili powder, and smoked paprika (~10-15 calories/tbsp).

  2. Mediterranean Mix: Add a few chopped olives and fresh parsley to the stuffing (~5 calories).
